Apple Cider Vinegar

In the autumn we’re lucky enough to have a huge glut of apples at Deans Court. Our orchard produces over 100 different varieties and every year we use them to press our own apple juice, and make our famous Dorset Apple Cake, which we then serve in the cafe as well as to eat fresh, baked in crumbles and generally enjoy.

However, we love trying out new recipes and in our cafe we always like to sell a range of slightly unusual health drinks. We’re currently selling (and loving) BumbleZest Sparkling CBD Drinks and health shots and really enjoy Willy’s ACV drinks. With Apple Cider Vinegar (ACV) growing in popularity and with more and more health benefits being revealed this year we’ve experimented with making our own. Should you like to do the same you can find our recipe below!

How to make ACV:

Roughly chop apples and place in large clean jars (glass or ceramic).

Make up a solution by dissolving 1 tablespoon of brown sugar per 1 litre of warm water.

Pour the liquid into the jars to cover the apples (the top ones may float on the top but that’s fine).

Use cotton or linen cloths or rags to cover the tops of the jars and tie tightly with string.

Leave for 6 weeks in a dark room, and check every so often to make sure all is fine.

If not ready after 6 weeks then just leave until it is.

That’s it! (We’ve just checked ours after 2 weeks and it’s smelling quite cider-like already!)
